Oatmeal Raisin Spice Cookies:
3/4 cup firmly packed dark brown
sugar
1/2 cup sugar OR ½ cup sugar and ½ cup Splenda
3/4 cup raisins (Plump raisins in boiling water for a few minutes, then
drain)
2 cups old fashioned oats
1 cup flour, 1 tsp. cinnamon, 1/2 tsp nutmeg, 1 tsp.
baking soda and 1/2 tsp salt mixed together with the flour.
(Light Spelt Flour may be used instead of regular wheat flour)
Mix all above together in order given.
Thoroughly blend mix.
Next Add: 1 1/2 sticks butter or margarine (¾ cup) softened at room
temp.
Note: Do Not Use DIET MARGARINE
1 egg, slightly beaten
tsp. vanilla
Mix until completely blended. You might need to finish mixing with your
hands.
Shape into walnut sized balls. You can press down lightly with a fork if
you want to.
DO NOT USE WAXED PAPER.
Place on a parchment lined cookie sheets 2 inches apart.
You may use ungreased cookie sheets instead of parchment.
Bake at 350°C for 11 to 13 minutes until edges are lightly browned. Cool
5 minutes on baking sheet. Remove cookies to baking racks to finish
cooling. Makes 3 dozen cookies...
